Each year, one Steamboat Scholar is selected from the junior class at Cornell's School of Hotel Administration to work at Union Square Hospitality Group (USHG).
USHG, led by celebrated restaurateur and one of Steamboat's previous Foundation Dinner speakers Danny Meyer, is a network that includes Union Square Cafe, Gramercy Tavern, Eleven Madison Park, Tabla, Blue Smoke, Jazz Standard, Shake Shack, The Modern, Cafe 2 and Terrace 5 at the newly renovated Museum of Modern Art, Hudson Yards Catering, and most recently, Maialino. Each USHG restaurant is lovingly hand crafted and distinctive, and strives to distinguish itself with warm hospitality and consistent excellence. USHG’s restaurants and chefs have earned an unprecedented 17 James Beard Awards, including the first-ever Outstanding Restaurateur, Outstanding Restaurant of the Year, Best Chef, Outstanding Service, Outstanding Wine Service, Humanitarian of the Year, Who’s Who of Food & Beverage, and Best Restaurant Graphic Design. In 2008, Union Square Café and Gramercy Tavern were rated by Zagat as the two most popular restaurants in New York City.
Union Square Hospitality Group is undergoing its most rapid growth period of its 24-year history. To fuel that growth, the company has focused on three divisions: the Core Restaurants, New Concepts, and Growth.
The Steamboat Scholar joining USHG from Cornell will have access to Senior Mentor, Randy Garutti (Cornell '97), Managing Partner of Shake Shack, who is in his eleventh year with USHG. Randy has been the General Manager of Tabla, Union Square Cafe, and Eleven Madison Park, and the Director of Operations for USHG. He recently took the reigns of the Shake Shack brand in order to concentrate on significant growth.
The Scholar will work closely with Randy on any, and every, aspect of developing Shake Shack into a national brand. This may include but is not limited to: significant operational experience (actually working in Shake Shacks), development templates (training, operational, HR, PR & Marketing, Community Investment systems), working on a Shake Shack in construction or during an opening, or any other aspect of the growth of USHG that the Scholar program timing coincides with.
